How do you manage it? It's hard to even find Kosher food in my area, when on the road it becomes even harder. If I am travelling, I basically keep "Torah Kosher" because it is nearly impossible to find out who did and didn't prepare the meat and I was at a subway and asked about whether or not their mayo was kosher and they didn't seem to know what kosher even was. So I had them make the sandwich dry and bought my own kosher mayo to put on it later.

You can do it a few ways:
You can bring your own food.
When that is a problem, you can eat the miscellaneous kosher food you find in grocery and convenience stores (of course not cooking them in non-kosher kaylim).
You can do some research and find out if there are any Chabad or Orthodox Shuls in the area you are travelling in. With that comes either chesed, or kosher restraunts.
I never have a problem when I travel, there are many options.

I may be travelling to Wales this winter and there aren't really many Orthodox communities around the area I am going. I am not sure I can pack enough food for two weeks.

Kosher MRE's.
I went to Japan a few years back. I brought a dozen Kosher MRE's with me. It saved my tukus. They aren't frozen, they use plain water in a chemical bag to heat up. They are perfect.
If they could have a little less sodium, they would be the perfect food!

I have a friend to gets them on a GSA contract for about $6 each. They are a life saver, and they were actually pretty danged good.
..did I mention they were Kosher?

You know, it turns out the prison I work for gets sealed kosher meals brought in for jewish inmates. Now some like the bone-in chicken meals are no longer allowed to be served on the cell blocks. So guess who gets to stock up for free.

Wow... they actually let you have them for free? Where I'm at you'd need to get permission, and a gate clearance... and, oh, wait... they don't accommodate for the religion of each employee, but they do the inmates. Odd... isn't it?

The prison kitchen is run by an outside company. Nice thing is they had a bunch of kosher sealed Bone-in chicken and potato dinners from MealMart that cannot be served to the inmates due to the danger of the bone being used as a stabbing weapon so guess who got stack of them for free?
We are by contract as employees entitled to a free meal each day so they have to let me have one if I ask.
